What
is your title and position at your current company?
I am the owner of
Grafton Peek Catering.

What
does your company do? How is it different than others like it?
Grafton Peek Catering provides complete food
& beverage services, custom crafted wedding cakes & desserts,
entertainment, A/V and much more to ensure an anxiety free experience for our
clients. From simple catering needs
through total event management, Grafton Peek works with our clients to achieve
complete event success.

How
many years have you been in the industry?
I have been in the
event business for roughly 15 years – Our Executive Chef Charles Bryant has
been in the food service industry for over 25 years.

What
was your very first job?
My first job was as a
bus boy in 1986 at the private country club my family owned in Greenwood.

What
lead you in into the event industry?
In 2001, my family
owned and / or operated 7 golf courses in Indiana that I oversaw the general
sales and profitability of. Several of our courses had banquet & kitchen
facilities so it was a natural fit.

Why
did you decide to join ISES?
Our downtown Indy
venue, Social, sponsored the bar services for the PACE awards this year and
after meeting many of the ISES members and seeing what the organization was all
about we wanted to be a part of it.

What
are you looking to gain out of our ISES membership and how can we help you
achieve that?
We are always looking
to forge quality relationships with other like-minded people in the events and
catering industry. It seems the best of
the best in Indianapolis events & catering are members and that appeals to
us.

What
is your most memorable event? Why?
Like you all, it is
hard with as many events as we do to pinpoint a single event but since you are
asking…Serving 3,100 people in the converted Pan Am Plaza ice rinks on multiple
levels in between 11a and 3p on Super Bowl Sunday for Stub Hub with no access
to the facilities after 9:30a that morning would have to be it. We trucked in and triaged a commercial
kitchen in a facility that at best had running water and heat. It was quite a learning experience but was
executed without a hitch.

What’s
one thing most people don’t know about you?
Most people don’t
realize that we provide such a wide range of services beyond food and beverage
catering including, but not limited to, cakes & baked goods, off site event
management, entertainment, total food service management for large corporations
and consulting services.

If
you were not in the event industry, what would be your dream job?
I
would have to say I really enjoy what I do and have more freedom than most
could ask for in doing so. With that
said, it would still be fun to play guitar for a living.
